Way Better Snacks Review

My hours at work have increased. Not in a scheduled way but because my workload has increased. What once was only a single task has grown to a handful of functions. Because I like to finish my work before I go home I often times go in at 6:30a.m. and leave around 5:45p.m. Rare occasions I leave right on time at 5. Lunch is often ate at my desk. I know, I know. Slapping my own hand. My waistline is suffering from this.

I have packed on quite a bit of weight in the past year. In an effort to change my poor eating habits since entering the work force I have begun packing my lunches everyday. Never knowing if I will be at work 8 hours or 11 hours I end up packing breakfast, lunch, and snacks. 

Every morning my 4 year old will ask what I'm taking and want to peek in my lunch bag. Since he started taking an interest that has forced me to make better choices. "Oh ham samich I like dat"... "Bahnana dat's yums" Because he sees me making healthy choices he too will ask to mimic what's in my lunch bag.

I am grateful that I was given the opportunity to sample Way Better Snacks. I received 6 bags of chips: No Salt Naked Blues, Simply Sweet Potato, Simply Sunny Multi-Grain, Simply Beyond Black Bean, Simply Unbeatable Blues, and Simply So Sweet Chili. 

These aren't just ordinary chips. These are sprouted chips that carry nutritional value due to nutrient-dense grains and seeds. Some of the seeds include broccoli seeds, organic daikon radish seeds, organic chia seeds, organic flax seeds, and organic quinoa. Look at a few of the benefits below:

Two Leaves and a Bud Review

After watching one of my favorite YouTubers, Allison, do a review of her favorite tea products I just knew I had to give this brand a try. Two Leaves and A Bud provides high quality teas in pyramid shaped satchels. Their name comes from the method of plucking tea, two leaves and a bud.
  • Alpine Berry - Berry teas are not a favorite but the aroma is sweet and very berry. 
  • White Peony (light and caffeinated) - Reminded me of the smell of being a little girl playing in a field of flowers. Such a comforting tea. You can see the flower petals in the satchel. Not bitter at all. 
  • Organic Darjeeling Whole Leaf Black Tea - Think about black tea is that I find them boring. However, this is smooth and an enjoyable cup of tea. 
  • Organic Pomi-Berry (no caffeine) - Smells earthy and has a sweet and fruity taste. Wish I had another satchel in order to try it iced. 
  • Better Belly Blend (no caffeine) - Tastes like there may be fennel in it. Had a stomach ache this morning and within 20 minutes my stomach was settled. Tastes really delicious. Smooth. One of my favorites.
  • Organic Chamomile (no caffeine) - When I go to the grocery store to refill my tea stash I usually go for Chamomile. This smells and tastes delicious. Another favorite. Love the calming effect since it is so comforting. 
  • Organic Sencha Green Tea (lightly caffeinated) - This tea reminds me of the first time I tried a green tea frappuccino from Starbucks since it tastes similar. My absolute favorite green tea I have ever had. 
  • Tropical Goji Green Tea (lightly caffeinated) - This tea has a hint of fruitiness. Not as strong of a green tea taste like the Organic Sencha Green Tea. Delicious. Another tea I wish I had another satchel of to try iced. 
  • Jasmine Petal Green Tea - Ick! Foul on it's own. Added a packet of Splenda and it made it somewhat palatable.
  • Mountain High Chai Black Tea (full caffeine) - Hands down my favorite in the bunch. Wish I had more of this. I could see myself enjoying this every morning instead of a cup of coffee. Gasp. I never though those words would ever come out of my mouth or leave my fingertips. Perfect on its own. 
  • Tamayokucha Green Tea (light caffeine) - This smells like green beans. Milder taste than Sencha Green Tea. I prefer the Sencha but this is still tasty. 
  • Better Morning Blend Whole Leaf Herbal Blend - What makes it a better morning? The energizing lemongrass and peppermint aroma. Yummy!
  • African Sunset Red Tea caffeine free - First time trying a red tea. Reminds me of the smells of a hospital. The smell is off putting. The taste isn't so bad but I can't get over the smell.
  • Gen Mai Cha Green Tea - Smells like seaweed but doesn't taste like it. Made me crave Annie's Seaweed Snacks.
  • Better Rest Blend (caffeine free) - Tried drinking a glass before bedtime while my 4 year old was still awake. Anything but restful. Body feels heavy. Feel like melting into bed. Plan better than I did and put the babies to sleep before beginning your wind down time. 
  • Organic Peppermint Herbal Tea (caffeine free) - I love peppermint flavored treats. This was too strong a peppermint taste. I could only handle a half cup. It upset my stomach. Even though that was the case this is my second favorite tea from the batch. Next time I will steep less than I did.
  • Organic Asam Breakfast (full caffeine) - The smell out of the plastic package didn't excite me. Not an exciting cup of tea but perfect for that caffeine jolt. Taste is somewhat bitter and would probably taste better with milk and sugar.
  • Organic Earl Grey - My favorite kind of black tea. This didn't disappoint. 
They have released a new line, Paisley Tea Co, which focuses on British-style teas. Given how much I enjoyed the 18 teas I was able to sample I am sure I would love these just as much. It was a pleasure being able to sample these teas for review and I greatly appreciate the opportunity to have been able to do so.

An Accident That Was Meant To Happen

In my last post I stated how I was having a difficult time adjusting to going back to work. I don't think it was actually working that I disliked but the place I was working at. I am a social being and crave that interaction with others. At the place I was at I felt like a caged animal in my cubicle with nothing but the sound of typing and gossip in my ear. It was very depressing and I was constantly in a bad mood even when I would be at home with my son because I knew I'd have to return again.
If you recall Itty Bitty was diagnosed with bronchitis and I had to miss a couple days of work in my first month of being hired since his fever was constantly at 100+ degrees reaching a high of 105 degrees. I was informed that my absences were "excessive" and going forward this was not going to be tolerated. Understandable. However, when I was hired I explained my situation that I am a single mom with no family in the state of Texas and also informed them of my son's daycare sick policy. They came across as more than understanding.

Returning to work the following Monday I dove back into work and gave it my all. I was even complimented on the amount of work I had managed to accomplish and how they were impressed. I worked the entire week through. Well, life sure is unpredictable.

That weekend I dropped my son off with his father and set out to make the most of my free time. On Saturday I set up a motorcycle ride. I was even spoiled with a trip to the Ducati store and a Shoei helmet (which I'm informed is a top of the line brain bucket) was bought for me. $500 later we headed for home to get suited up for our ride. Full sleeve top, thick jacket, jeans, socks, shoes... check. Most importantly, brain bucket... check.

Not even two minutes into our ride the back wheel of the Ducati hit a curb and threw my legs from the bike. I don't know how I managed to hold onto the rider but I did. My hands gripped tight around his waist while my feet were being dragged. I remember thinking "just hold on" and at one point in that brief moment I thought the rider had managed to regain control and was coming to a stop. Not so much.

We hit the opposite curb with the front wheel which launched us both from the bike. I remember watching the rider go flying with the bike and myself rolling a couple times then coming to a sliding finish on my stomach. The helmet cushioned my head... the only part of our bodies with no injuries.

A flash of my son's face came to mind and then the rider. I jumped up. Panicked when I looked down to see one of my shoes completely ripped from my foot and my sock torn and blood. My jeans were ripped to hell at the knee and I had two deep lacerations. My stomach had road rash as well as on my hands. In my panic to check on the rider I couldn't get my helmet off. My hands were shaking. I was screaming for him to come to my aid as he laid there groaning in pain and moans of not being able to breath. He somehow pulled himself to his feet and unbuckled my helmet and ripped it off.

I reached into my jacket pocket to find that my phone was nowhere to be found. In a quick search I found my phone about 15 feet from us. Luckily, it was still working with slight damage to the back cover.

In the Emergency Room we were admitted together and our injuries were looked over. The rider has two broken ribs and road rash. I have a sprained foot, lacerations, and road rash. We are both incredibly lucky to be alive and have agreed that was the last ride for us. He's selling his bikes. It's bittersweet. It was an exciting hobby to have.

I returned to work that following Tuesday since the hospital work release had that as the date. I put my best foot forward (haha!) and gave it my best shot. When my supervisor came to check on me she advise I go to my family doctor and get an extended work release. I was grateful for that advice. I wasn't able to take Vicodin while at work and was sitting there in pain. My foot and knee were burning and my body ached.

I was given the rest of the week off. I got plenty of rest, ice and elevation.

Come Monday, I still was nowhere near healed and was still on pain killers. However, I knew that I needed to go back to work and decided to just tough it out. I did. I busted my ass even to make up for the time I needed off to help heal. Once my work was caught up the department manager pulled me into the office with one hour left in my work day. I wasn't shocked with the news that was delivered when I saw the district manager and another supervisor present.

"You don't fit our culture and you're not a right fit for this company. We're letting you go."

A weight was immediately lifted. It felt amazing to turn in my badge and not look back at that job. A company that has no compassion for it's employees is one I don't want to work for. Shit happens. Bad timing for a new hire with no sick or vacation time. No job is more important than my son or my health.

I'm not going to lie, I was worried about finding a new job and if and how long it would take. Very next day I found a job listing that was right up my alley. Working as a cashier at a cafe in a very nice neighborhood with a chill atmosphere and for the same pay. Big smiles. I have another interview tomorrow with the general manager. I'm confident that will go well.

This accident was a blessing. It made me realize how precious life is. Tomorrow is promised to no one. It got me out of a job I dreaded going to and got me a foot in the door in an industry I want to be in. It also pulled me out of my funk I was in. My passion for cooking came back. My love grew stronger. My happiness is greater than ever. I truly believe that everything happens for a reason.

Bauducco Panettone Specialty Cake


Bauducco Panettone is a moist ready to eat specialty cake that is a classic Italian holiday bread. Cake in a box delivered to my doorstep? I had no idea what to expect. After taking the cake out of the plastic wrap and removing the liner it looked like a giant muffins of sorts. The chocolate chip variety is the one Itty Bitty and I decided to slice into since we aren't raisin fans. The aroma was sweet and had a hint of orange.


I sliced it into nine servings and plated a slice for each of us. This cake is just what the box promised it would be... moist and delicious. You can enjoy it by the slice or check out their website which has recipe ideas. All of them sound amazing.

Voila! 10 Minute Chicken Parmesan By Birds Eye

I was given the opportunity to try out Birds Eye Voila!. We are a pasta loving household. Chicken Parmesan was recently requested and I knew exactly which bag I'd be pulling out of the freezer at my local grocery store.

Whenever I am buying a new product I'll flip the item over and read the nutritional information. The stats aren't too shabby and this is a product that I'd be happy to keep stocked in my freezer for those nights when my meal planning skills are lacking or I just don't have it in me to cook a fussy meal.

This meal couldn't be easier to put together. One skillet with a lid and 10 minutes. That's it! One recommendation I have is to stir this frequently scrapping the bottom of the pan. The sauce was beginning to stick to the bottom of the pan so I turned the heat down to medium as well.
You can make out all of the ingredients: breaded chicken, penne, roma tomatoes, and onions.
I've had my share of frozen meals and I can tell you that the flavors in this one are outstanding. I had my father visiting for the week and he got the chance to try this out with us. He exclaimed, "You can smell and taste the garlic!" You really could make out exactly what you were eating. My favorite bites were the roma tomatoes. In fact, I wish there were more bits of them.
Frozen sauce. Easy to remove from the packet.
Just a heads up... if you are making this for more than two I recommend picking up the family size or another bag because the portions are generous and each of these bags gives two and a half servings. At the grocery store a bag was $3.98 and that came to $1.99 per serving since it gave us two servings instead. Can't beat that price eating out. Give this a try. You won't be disappointed.

Kodak Quickstart Photo Book


Imagine my surprise when I opened up an email to find that I had a congratulatory message that I had been selected as a member of Foodbuzz's Tastemaker Program. I was beyond giddy! I have been selected as one of the few who to create a Quickstart Photo Book. Complete creativity has been placed in my hands as well as the ability to resize, move, rotate, and even overlay my photo images and text. Exciting! However, for me, this is very intimidating.


I am not tech savvy by any means. Why couldn't I have been selected to participate in a Foodbuzz 24x24? I can handle cooking. Anything on the laptop is about foreign to me.


Kodak's Quickstart Photo Book takes the guesswork out of the whole process. I followed the prompts on the screen and began uploading my images straight from Facebook. I began cropping and editing the images along with adding text.


So many ideas for Photo Books came to mind. Since my little man is learning to read at age 3 and he has a love for the alphabet I thought it would be nice to create an A-Z book. Since I am crunched for time at this moment I decided to create a "Through the First Years" theme. My favorite photos of my son from birth to 3 years old were chosen and quotes were added.

Maxine Cooks

My father arrived yesterday morning from Tucson, Arizona for his visit this week. I have lots of fun stuff planned and some good eats lined up. Looking forward to spending some quality time with him.

Today I am surprising him and Itty Bitty with a trip down to Galveston, Texas to go play in the Gulf. Itty Bitty has been asking to go for about two months now. I am still undecided if we'll be packing a cooler filled with yummies or if I'll let a seafood restaurant do the dirty work. As of right now, I'm willing to bet it will be the latter.

Enjoy Life Gluten-Free Products Review

double chocolate crunchMy ever-so-kind neighbor agreed to hold onto my package until I returned from my Kansas vacation. I actually thought what was waiting for me at home was ground lamb. When my neighbor knocked on the door shortly after my arrival I was surprised when it ended up being my Enjoy Life products.

I immediately opened the box and was excited to find Double Chocolate Crunch Granola and Semi-Sweet Chocolate Mega Chunks. Since I had just drove 12 hours I was exhausted and not ready to dive into my new "project".

Here it is, a couple days later, and I've finally got some energy. First order of business was tackling the mess of a house and then my "just for me" time was spent with these products and my information packet.

While my blog is not a gluten-free / allergen-free blog I was still giddy to get to try new products and help spread the word to all of you. I don't have much experience with gluten-free products but have tried a fair share of products available at my local grocery stores. Most product taste experiences have been pleasant and others, well, not so much.

How do these products rate?

The Double Chocolate Crunch Granola is great for breakfast or for an on the go snack. Itty Bitty definitely got behind this product and they have his full support. C'mon... chocolate and granola... can't go wrong there. It is loaded with Semi-Sweet Mini Chocolate Chips in every bite. The package is resealable for freshness and perfect for throwing into my purse for that on the go snack.

Next up was the Semi-Sweet Chocolate Mega Chunks. Taking a note straight from the information packet I received I enjoyed these "by the handful right out of the bag". These Semi-Sweet Chocolate Mega Chunks taste like the usual pantry staple I buy. Taste was not an issue here. Delicious. "Nommy", as Itty Bitty would say.

It's nice to know that these products are great for individuals with any of the top 8 allergens: wheat, dairy, peanuts, tree nuts, egg, soy, fish, and shellfish. While I don't have to worry about this I know that others do. Enjoy Life takes the guess work out of it for you. Even with these restrictions you CAN enjoy these products like Itty Bitty and I did.
